Description and objective: Build's on candidates foundation knowledge of food safety. Develops their ability to ensure that their staff are fulfilling both legislative and company requirements
Course contents include:

Food poisoning and food borne disease
Physical, chemical and microbial contamination of food and its prevention
Food storage and temperature control
Food preservation
Design and construction of food premises and equipment
Cleaning and disinfection
Pest control
Personal Hygiene
Legislation
Supervisory Management Suitability: Supervisory level staff. Those responsible for supervising and training food hygiene. Those responsible for monitoring and auditing hygiene standards
